One of my biggest everyday struggles is to make fast, easy and healthy meals. My goal is to make it easier to cook at home than to wait 45 minutes for a food delivery company to show up. My food philosophy is centered around eating a balanced vegetarian diet using from-scratch cooking methods and saying no to heavily processed food.
So what was the secret to suddenly finding cooking at home remarkably easy with long days at a full-time job and busy weekends? These two kitchen rockstars changed me from "let's get a burrito tonight" to "let me whip up a quick dal makhani" - Vitamix and Instant Pot.
Over the last two years, I've been experimenting with a variety of soups, smoothies, salads, stir-fry bowls and other one pot meals. I also enjoy making (and eating) Indian food. My recipes are pseudo-Indian because I experiment with ingredients and techniques a lot, usually to find a lazier/faster way. Not sure that my mother/mother-in-law would approve of these ways, but I think they're just happy that I'm cooking at home. #lowexpectations
